School ended for me on a Thursday, and by Friday evening we were on the road to Toledo for my 15 year old’s soccer tournament. We got home that Sunday afternoon, and by 3:00 am that very next Monday we were on the road to the airport and were in Key West before noon. We walked in our own front door after midnight 6 days later leaving me a little on the tired side. That’s why this week’s meals are comprised of 5 easy weeknight meal recipes–this mama didn’t want no fuss this week! lol!

It’s too bad the picture for the salad doesn’t pop up…it is such a pretty salad!!! And it is so easy to make ahead. You could put the salad in mason jars (prep them on Sunday) and use one each day for lunch on the go! I add grilled chicken to my salads for protein.
